Vegetarian Baked Ziti

Ingredients
20 oz broccoli, fresh or frozen, rinsed and chopped 8 oz canned mushrooms, rinsed and drained 1 large Onions, chopped 15 oz Ricotta Cheese 2 Tsp Extra Virgin Olive Oil 6 cup Spaghetti Sauce 16 oz Barilla Ziti Pasta 2 sprays cooking spray 4 oz finely shredded sharp cheddar cheese 2 oz finely shredded Parmesan cheese
Directions
• Preheat oven to 350°F. Spray a 9 x 13 glass baking dish and an 8 x 8 glass baking dish with cooking spray.
• In a large skillet, heat olive oil over medium heat. Sauté onion until softened, about 5 minutes.
• Add broccoli and mushrooms. Continue cooking until broccoli is fork tender, about 5 minutes.
• Add pasta, sauce and ricotta. Stir until well combined.
• Pour pasta mixture into the baking dishes. Sprinkle evenly with shredded cheeses.
• Bake 45 minutes.


Serving Size: makes 12 servings of about 1 1/2 cups
