Southwest Chicken and Rice in Cooking Bag

2.5 lbs boneless, skinless chicken breast1 cup Basmatie Rice1 cup frozen corn1 can (14.5oz) diced tomatoes2 cups water1 pkg McCormic southwest seasoning (1.25 oz)
Preheat oven to 350. Arrange opened cooking bag in 13x9 inch baking pan. Cut Chicken breast into 1/8ths.
In a bowl, combine Seasoning, Rice, Tomatoes (undrained), Corn and water. Spoon mixture over chicken and spread evenly. Close bag loosely with nylon tie. Cut 4 small holes in top of bag to allow steam to escape.
Bake in lower half of oven 55-60 min.
Remove from oven. Let stand 5 min. Cut open bag and serve.
