Breakfast Bars

Ingredients
1/2 Cup Butter (or margerine)1/2 Cup Splenda Brown Sugar1 Large Egg1/4 Cup Honey1.75 TSP Lemon Juice1/2 Cup Mashed Banana's3/4 Cup Whole Wheat Flour1 TSP Baking Powder1/4 TSP Salt1/2 Cup Instant Oats2 TBSP Wheat Germ3/4 Cup Raisins1/2 Cup Sliced Almonds
Directions
Preheat oven to 375 degrees. Spray a 8X8 pan with Pam.
In a large bowl, cream the butter and Splenda with a wooden spoon.
Add the egg and beat until light and fluffy.
Mix in the honey, lemon juice and bananas.
In another bowl, measure and pour in dry ingredients-add wheat germ and oats.
Gradually add the dry ingredients to the liquids(about a 1/3 at a time).
Stir in the raisins and almonds.
Spead the batter in the Pam sprayed pan.
Bake for 20-30 minutes.
Cool on a cooling rack. Cut into bars.

These good for you bars have a cake like consistency. They also freeze well! Ready for you to grab in the morning before heading out the door!

    I wanted something chewy and this is described as cake-like, but when I refridgerated these bars they are more chewy. This is a great chassis for experimenting e.g. replace the flour w spelt or something, and maybe add some chinese 5 spice next batch. - 4/4/07
