Ham & Cheese Oven-Puffed Pancake

Ingredients
3 large eggs1T Dijon mustardHeaping 1\2 t salt1/4 t freshly ground pepper1 cup all-purpose flour1 1/4 cup whole milk2\3 cup grated cheddar cheese1T chopped chives3 T butter5 slices (4 ounces) thinly sliced deli ham, finely diced
Directions
Preheat oven to 425 with oven rack in middle.

Whisk eggs with mustard, salt & pepper. Whisk in flour. Gradually add milk & whisk until batter is smooth.

Place butter in 10-12-inch non-stick oven-safe pan, & put pan in oven. Remove when butter is melted & swirl pan to distribute evenly. Sprinkle the ham evenly around the pan. Pour batter into pan. You may need to redistribute ham evenly.

Place pan back in oven & bake for 25 minutes. It will puff up but deflate once removed from oven. Cut into wedges & serve.

    Thank you! Hubby loves it for breakfast, but it's great for dinner, too.
