0.25 cup Parmesan Cheese, grated1.0 large Egg, fresh, whole, raw1.0 tsp Pepper, black1.0 tsp Salt2.0 clove Garlic4.0 cup, mashed Zucchini0.25 cup Flour, white2.0 tbsp Extra Virgin Olive Oil
Remove seeds and grate zucchini into a colander. Toss with salt and let sit for 15 min. Squeeze thoroughly all water from zucchini, place in bowl. Sprinkle flour, parmesan cheese ,garlic,pepper and egg . Mix thoroughly. Divude into 4 portions. Heat olive oil over medium heat once hot, place the 4 portions of batter on skillet for approx 2 minutes...flip and cook an additional 2-4 minutes, til crispy on both sides and cooked through.
