Bacon egg bites

Ingredients
3.0 slice (1 oz) Cheddar Cheese2.0 tbsp Sour Cream, reduced fat6.0 large Egg, fresh, whole, raw10.0 medium slices, cooked (raw product packed 20/lb) Bacon, pork, microwaved3.0 tbsp chopped Onions, raw0.7 cup diced Potato, raw
Directions
Cook bacon in frying pan and set on paper towels to cool, reserve the fat. Saute onions and potato in bacon fat. Chop cooked bacon into small bits. In food processor chop cooked onion, potato, and hand full of bacon along with a splash of bacon fat until a sticky crumbly consistency. Use bacon fat to grease muffin cups and then press a tsp of crumble mixture into the bottom to form a tiny crust. Sprinkle each crust with a pinch of cheddar. Scrambled eggs and sour cream and seasoning. Fill each cup to about 2/3 full with egg mixture and then distribute chopped bacon and top with cheddar. Bake at 375 for around 20 minutes. Serving Size: One mini muffin.
