Skillet Taco with Riced Cauliflower

Ingredients
2 lb. Ground Beef, 75% lean (by URBANK9) 1 medium (2-1/2" dia) Onions, raw, diced14.5 Oz. Del Monte Petite Cut Diced Tomatoes 10 Oz. Frozen Green Giant Riced Cauliflower 2 Cup Food Club Shredded Mild Cheddar Cheese 2 Tbs. Homemade Taco Seasoning
Directions
Brown ground beef and onions. Drain fat, then add tomatoes, riced cauliflower, and taco seasoning. Let simmer to let flavors blend then add half of shredded cheese, stir and let melt. Layer rest of cheese on top of meat, cover with a lid and let the cheese melt before serving.
