Crock Pot WhatchaGot Soup (turkey lentil barley veggie)

1 LB ground turkey1 medium onion, chopped2 C diced potatoes, or 1 can sliced potatoes1 C celery, chopped1 C carrots, chopped, or 1 can sliced1 C lentils, rinsed and sorted.5 C pearled barley1 can (14 oz) beef bouillion or 2 cubes1 tsp salt3 cloves garlic, chopped1 can spinach, drained4 C stewed tomatoes (no salt)8 C water1 Tbsp ground pepperSeasonings of your choice
Brown ground turkey with onion until meat is cooked through. Put in bottom of VERY large crock pot or soup pot.
Layer all vegetables and bouillion cubes (if using) over meat mixture, then lentils and barley. Add all remaining ingredients to pot except for tomatoes.
Cook 6 hours in crock pot on LOW, or simmer on stovetop, until tender. Add tomatoes, heat through, and serve.
This is even better the next day!
