Baked Apple Oatmeal

3 C rolled oats (quick or old-fashioned)2 C chopped apples2 C milk1/2 C brown sugar1/4 C melted butter1/3 C applesauce1 large egg, beaten1 and 1/2 tsp baking powder1 tsp ground cinnamon3/4 tsp salt
Prepare 2-quart baking dish with light coating of cooking spray. Preheat oven to 400 degrees.
In large bowl, combine oats, baking powder, salt and cinnamon. In a separate bowl, mix together milk, egg, applesauce, butter, and brown sugar. Stir the liquid ingredients into the dry and pour into prepared dish.
Bake 20 minutes.
Stir the oatmeal, fold in chopped apple and bake 20 more minutes until top is lightly browned. Spoon tino serving bowls and serve w/milk and a little extra brown sugar.
You can replace apples with an equal amount of blueberries or other fruit.
