Chicken and mushrooms in wine sauce

12 serving Chicken-Perdue Boneless Skinless Chicken Breast, 4oz 1 tbsp Extra Virgin Olive Oil 4 fl oz White Wine 1 serving Broth, chicken: College Inn, Light & Fat Free, 50% less Sodium, Chicken Broth, 1 cup/serv 4 tbsp Fat free half and half 1 tbsp Argo 100% Pure Corn Starch 2 tbsp chopped Shallots 3 cup, pieces or slices Mushrooms, fresh
Sauté chicken in olive oil then place on side.
Sauté mushrooms and shallots in same pan, until all liquid is evaporated and mushrooms are nicely colored.
Add wine and let cook out, then add chicken broth .
Add cornstarch and let simmer until thickened. Turn off flame and stir in half and half.
Season with salt and pepper.
Garnish with chopped parsley.
