Keto No-Bake Peanut Butter Balls

Ingredients
1/2 c. Peanut Butter2 T. Butter2/3 c. Powdered Erythritol1/3 c. Protein powder3/4 c. Coconut Flakes, Unsweetened1/2 c. Peanuts, chopped Pinch of salt
Directions
1. Microwave the butter & peanut butter for about a minute until very soft. Mix well. 2. Add salt & erythritol. Mix vigorously til smooth. Add protein powder. Much again. It will be very stiff. Lastly, add coconut and peanuts. If too stiff to mix, kneading on a parchment-lined surface may help. 3. Divide into 16 portions onto a parchment paper lined pan or cookie sheet. I like to roll each dollop into a ball, then flatten a bit. 4. Chill in fridge for an hour. Once chilled, transfer info a ziploc or airtight container. They can remain refrigerated or not as you (and your climate) prefer.
