Date Energy Balls Carrot Cake

6 medjool dates (1/2 cup dates)1 1/4 cup oats3/4 cup unsweetened coconut2/3 cup chopped pecans1 TBSP flax seed meal1 tsp cinnamon1/2 tsp nutmeg1/2 tsp ginger1/4 tsp salt1 cup carrots -finely grated (approx 3 med carrots)1 tbsp cashew butter (optional)1 tsp vanilla (optional)
Soak dates in 2/3 cups hot water for 10 minutes.
Drain dates and grind with immersion blender until a paste forms. May add some water if needed.
Combine oats, coconut, pecans, flax, cinnamon, nutmeg, ginger, and salt in a blender. Pulse until a coarse meal forms.
Finely grate carrots.
Combine all ingredients in a bowl and mix.
Roll into balls. Refrigerate.
