Oven-Roasted Chili Cheese Potatoes

Ingredients
1 1/2 lbs small red potatoes, cut up2 tbsp olive oil1/2 tbsp chili powder1 tsp cumin 3 oz cheddar cheese, shredded
Directions
Preheat oven to 450*

In a bowl, combine the potatoes, olive oil, chili powder and cumin. Mix until well combine (your hands work best for this!)

Cover a cookie sheet with aluminum foil and spray cooking spray on the foil. Pour the potato mixture onto the cookie sheet, making sure it's in an even layer.

Cook the potatoes for 20-23 minutes. Once done, add the shredded cheese to the top and cook for another 2 minutes.
