Chocolate Covered Strawberries

3 serving Endangered Species Strong Velvety Dark Chocolate 88% cocoa - one whole 3 oz bar 12 large (1-3/8" dia) Strawberries, fresh
Line a baking tray with parchment paper, and make room in the refrigerator for cooling the chocolate covered strawberries.
Wash your strawberries in a colander and keep the leaves on. Pat dry with clean cloth or paper towel.
Slowly melt a whole 3 ounce bar of the chocolate in a double pot, the bottom
Pot with an inch of water, over medium heat. Stir until smooth and remove from heat.
Carefully holding a strawberry pinching it by the leaves with 3 fingers and roll the berry in the melted chocolate, then lay it on its side on the parchment papered baking tray. Repeat with all the berries. Put the tray into the refrigerator and wait 15-30 minutes until chocolate is hardened.
Leftovers may be kept in a sealed container in the fridge for 2-3 days.
