Hummus Wrap

Ingredients
Chickpeas (garbanzo beans), 1 cupRomaine Lettuce (salad), 4-6 leavesRed Ripe Tomatoes, up to 1 medium whole Feta Cheese, 1/2 cup, crumbled (no fat or regular)Whole Wheat Tortilla, singleOlive Oil, 3 tbsp or to tastePepper, to tasteCrushed Dried Red Peppers, to tasteCider or Red Wine Vinegar, 1 tbsp or to taste
Directions
Wash the lettuce and tomatoes, then cut tomatoes to desired chunk size. Place the lettuce and tomatoes onto the tortilla, and then sprinkle the vinegar over the lettuce and tomatoes. Put the chick peas, olive oil, tahini, pepper, and crushed dried red peppers into a bowl, and then, using a potato masher or fork, crush the chick peas into a paste and mix thoroughly with the other ingredients. Spread the paste over the lettuce and tomatoes, and then crumble the feta cheese over it. Wrap the lettuce around the other ingredients, and then close the tortilla into a wrap.

Makes enough for one person.
