Italian Potato Salad

Salad:2 lbs Red Potatoes12 oz bag fresh green beans1 small red onionVinaigrette:1/2 cup red wine vinegar2 tbsp Dijon mustard1 tsp olive oil1 tbsp dried basil1 tbsp dried parsleySalt and fresh ground pepper to taste
Chop the potatoes into bite-sized pieces and cook until just tender.
Do the same with the green beans in a separate pot (or cook in the microwave). Do not overcook the green beans - they should still be slightly crisp.
Chop the red onion.
Combine the vinaigrette ingredients and mix well.
Once the potatoes and green beans have been cooked, rinse well under cold water to bring down the temperature. Combine all ingredients and let sit for about one hour.
Makes four meal-size servings or eight side servings.
