One Bowl Cranberry Chocolate Cake

1 cup Granulated Sugar .875 cup Flour, whole grain .375 cup Cocoa, dry powder, unsweetened 1.5 tsp Baking Powder .5 tsp Salt 1 extra large Egg, fresh, whole, raw .5 cup Milk, nonfat (skim milk) .25 cup Canola Oil 1 tsp Vanilla Extract .5 cup (8 fl oz) Water, tap 0.5 cup Cranberries, dried, sweetened (craisins)
Mix dry ingredients together until blended. Make an space in the centre of the bowl and add egg, milk, oil and vanilla. Stir moist ingredients until well blended, then stir into dry ingredients to make a batter. Stir in the cranberries. Stir in the boiling water and blend well.
Pour into a cake pan lined with parchment.
Bake at 350F for 30 minutes.
