Honey Nut Oatmeal Raisin Cookies

1 1/2 cups wheat flour1 teaspoon baking soda1 teaspoon salt1 teaspoon cinnamon3 cups old-fashioned oats1 1/2 cup raisin1 1/2 cup chopped nuts (optional)1 cup shredded coconut (optional)2 eggs or egg substitute1 cup applesauce1/2 cup apple juice concentrate3 tablespoon honey1 teaspoon vanilla1/2 - 1 cup water
In large mixing bowl, combine flour, baking soda, salt, and cinnamon.
Toss in oats, raisins, nuts, and coconut, stirring after adding each item.
Beat eggs lightly and add applesauce, thawed apple juice concentrate, honey, and vanilla. Mix with dry ingredents. Add water until all ingredients are moist.
Press into bottom of a greased 13x9 inch pan or jelly roll pan. Bake 30-35 minutes in 350 oven. Cut into squares or use fun-shaped cookie cutter shapes.
