Crab Stuffed Mushrooms

Ingredients
15.0 oz Wild Caught Lump Crab Meat5.0 cracker Saltine Crackers (Saltines)2.0 tbsp Mayonnaise, regular (mayo)3.0 tsp Grey Poupon Dijon Mustard1.0 large Egg, fresh, whole, raw0.5 cup, chopped Sweet peppers (bell)2.0 serving Green Onion (fresh-1 stalk)340.0 Grams Mushrooms, fresh2.0 slice (1 oz) Swiss Cheese
Directions
Gently clean out mushrooms caps with a spoon. Dice peppers and onions, crush crackers, and beat egg, and set aside. Mix all ingredients together (except for the mushrooms of course) and add 2 top of Old Bay seasoning, a dash of cayenne, and a pinch of salt.. Fill mushrooms caps with a cup of the crab mixture. Bake at 350 for 20 mins then top with cheese and bake until melted.

Serving Size: Makes 4 mushrooms stuffed with 1 cup of mixture
