6-8 Small Red Potatoes1/4 cup Smart Start Mayo1/4 cup Fat Free Sour Cream2 tablespoons lime juice1/4 cup chopped fresh cilantroKosher Salt/Black Pepper to taste
Boil potatoes until fork tender. Drain and cube.
Mix mayo, sour cream and lime juice. Add chopped Cilantro. Pour over potatoes while they're still warm. Mix all, add salt and pepper to taste. Best if allowed to sit overnight!
