Crepe Pancakes

Ingredients
1/2 cup Egg Beaters or similar (2 eggs worth)3 cups milk2 tbsp vanilla extract2 cups flour1-2 tbsp. finely-ground flax meal1 tsp salt1/2 tsp baking powder
Directions
Combine all liquid ingredients in large mixing bowl.
Combine all dry ingredients in separate bowl, mix well.
Add dry ingredients to wet, beat with electric hand mixer until just slightly lumpy. Makes approximately 12 4 inch pancakes.
