Homemade Meatless Pasta Sauce

3 cans (28 oz each) crushed tomatoes1 can (6oz) tomato paste4 oz water (stir in paste can to get any residue)2 cloves garlic, minced1 medium onion, chopped1 T sugar (cuts the acidity of tomatoes)1 t basil2 t Italian Seasoning1/2 t pepperSalt to tasteAdd/reduce spices to taste.
In large pot on medium-high sweat the onion and garlic until onions are transparent.
Add remaining ingredients, turn up heat, and bring to boil.
Reduce heat to low and simmer uncovered until sauce is thick (1-2 hours). Stir occasionally.
Makes 10 1-cup servings
