Ingredients
1 lb. potatoes (not red, but larger)2 tbsp oil3 cloves garlic, diced1 tbsp. fresh ginger, crushedsalt to taste1/2 tsp turmeric powder4 to 5 green chili pappers1/2 cup fresh cilantro, chopped
Directions
Cut potatoes lengthwise into 4 to 5 pieces. Heat the oil in a heavy skillet. Add potatoes and remaining ingredients. Cover and cook over low heat until potatoes are cooked (20-25 minutes). Garnish with cilantro and serve.
