Baked Falafel

Ingredients
1 19oz can of chickpeas, drained and washed1 small onion, chopped finely2 cloves of garlic, chopped finely1 tbsp fresh parsley, chopped finely2.5 tbsp vital wheat gluten1 tsp ground coriander1 tsp ground cumin1/2 tsp baking powdersalt and pepper to taste2 tbsp olive oil
Directions
Drizzle olive oil evenly in shallow baking dish. Prehead oven to 350 degrees.

While oven is preheating, mash chickpeas in food processor or with hands. Add onions and garlic and blend together.

Add remaining ingredients. Should be a thick paste.

Shape into ping pong sized balls and place in preheated baking dish. Bake for 15-20 minutes, turning halfway through cooking.
