Zucchini Muffins

Ingredients
6 eggs1 cup olive oil1 cup plain fat free yogurt2 cups sugar4 cups grated zucchini4 teaspoons vanilla extract3 cups all-purpose flour3 cups whole wheat flour.5 tsp nutmeg2 tsp baking soda1 tsp baking powder2 tsp salt1.5 cup raisins (optional)
Directions
Preheat oven to 350 degrees
Line 40 muffin cups with paper or tin liners
Beat eggs in a large bowl. Add oil and sugar and mix, then do the same with the zucchini and vanilla.
Combine flour, cinnamon, nutmeg, baking soda, baking powder, salt and raisins (if you're using them).
Stir flour mixture into egg mixture, and divide up between muffin cups equally.
Bake for 20-25 minutes.
