Pork Marsala

Ingredients
1/4 cup all-purpose flour1/4 tsp salt1 lb pork tenderloin, trimmed and cut into 1/2" thick slices1 tbsp margarineCooking spray3/4 cup Marsala or other red wine1 large garlic clove, minced1 teaspoon (1/2 cube) beef-flavored bouillon granules1/2 teaspoon freshly ground black pepper
Directions
1. Combine flour and salt in a heavy-duty, zip-top plastic bag. Add pork; seal bag and shake until pork is coated.

2. In a bowl, combine Marsala wine, garlic, bouillon and black pepper. Set aside.

3. Melt margarine in a large nonstick skillet coated with cooking spray over medium heat. Add pork; cook until browned, turning once. Remove from pan.

4. Add wine mixture to pan; simmer, uncovered, 2 minutes.

5. Return pork to pan; cover and simmer 2 minutes or until sauce thickens. Serve over pasta, if desired.

Makes 4 (3/4 cup) servings.
