Skinny Cole Slaw

Ingredients
1 lb. bag of bagged coleslaw mix (or 1 c raw grated carrot and 6 c grated cabbage)1/4 c fat-free mayo1/2 c fat-free sour cream2 1/2 Tbsp. cider vinegar1 tsp. Dijon mustard1/8 t. salt1/8 t. pepper1/4 t. paprika1/4 t. caraway seed2 packettes Splenda or Sweet 'n Low (optional, depends on your taste buds)
Directions
Put the cabbage/carrot mixture in a non-reactive bowl. (aka NOT metal)
Mix the rest of the ingredients -- except for the sweetener --- in a bowl and fold into the cabbage.
Sweeten to taste and add some more seasonings if you desire.
Cover with cling film and let sit in the fridge for at least 3 -4 hours -- taste and adjust seasonings if desired.
Stir well and serve cold.

    We cannot get Agave in Canada but thanks for the tip ... how much would you use?

    Folks who made comments about the calories/servings: It's obvious she didn't enter the number servings into the calculator. This is probably more like 8-12 servings, which would make it a very low calorie (and yummy!) slaw. Especially good with pulled pork. - 5/6/12

    Yeh!! Finally - a recipe for ONE SERVING. Why do people always assume that if you have a weight problem you must be cooking for a big family? All the recipes for 6 to 10 servings are pointless because if you are only 1 or 2 people in the household what should you do with the leftovers? - 6/30/09
