Pasta with Sausage, Tomato, and Spinach

Ingredients
6 oz whole wheat pasta shapes, such as shells2 Italian sausage links, removed from casings2 cloves garlic, chopped9 oz baby spinach15-oz can no salt added diced tomatoes, drained4 tb grated Parmesan or Pecorino cheeseSalt and pepper to taste1 tb olive oil
Directions
Cook pasta until tender.

In a large nonstick skillet, cook sausage over medium-high heat, breaking up with a wooden spoon, until cooked through, about 5 minutes. Stir in garlic, spinach, and tomatoes. Cook, stirring often, until spinach wilts and tomatoes begin to break down, about 3 minutes. Remove from heat, cover, and keep warm.

When the pasta is cooked, drain and return to the hot pot with a bit of the cooking water. Stir in the sausage and spinach mixture. Add the cheese, olive oil, and salt and pepper, combining thoroughly. Serve in pasta bowls with extra cheese for those who wish it.

    This one is a keeper. The flavor was a little mild for me but my husband thought it was perfect. I'll add something to give it a little more kick next time, perhaps red pepper flakes, but keep hubby's portion exactly the same. - 7/2/14
