1/4 cup sunflower seeds1/4 cup pepitas (pumpkin seeds)1/2 cup currants1/2 cup hot water1/4 cup semi-sweet chocolate chips (mini are best)2 cups flour1 cup rolled oats1/2 teaspoon baking powder1/4 teaspoon salt1/3 cup canola oil1/4 cup honey
Preheat oven to 350 degrees. Soak currants in hot water for about 15 minutes. Drain, but reserve currant water.Toast sunflower seeds and pepitas on a baking sheet until they turn brown, being careful not to burn them. Cool thoroughly.
In a large bowl, combine flour, oats, baking powder, and salt. Add currant water to dry mixture, plus canola oil and honey. With a rubber spatula, stir until combined. Add seeds and stir to combine, then add currants and chocolate chips. Don't overmix.
Form teaspoon-sized patties on a cookie sheet, preferably lined with parchment paper. (These do not spread at all.) Bake until golden brown, about 12-15 minutes. Don't overbake or the cookies will turn into rocks.
