Mango-Zucchini Salad

Ingredients
1/2 cup canola oil2 tablespoons lemon juice1/4 cup apple cider vinegar1 tablespoon sugar3 teaspoons fresh basil, choppedsalt and pepper, to taste2 mangos diced1 medium red onion, chopped2 medium zucchini squash, quartered and sliced2 medium summer squash, quartered and sliced
Directions
1. Mix oil, vinegar, sugar, basil, salt, and pepper.

2. Prepare the mango, and toss into the dressing above to coat

3. Add the onion, squash, and zucchini; toss again.

4. Cover and chill for at least an hour, preferably over-night.

5. Before serving re-toss and check seasoning.
