Dana's Vegie Roast

Ingredients
1 1/2 pounds fingerling heirloom potatoes11 oz onion7 oz carrots9 oz sweet peppers1/3 c. olive oil1 T. black pepper1/2 T. Salt
Directions
Cut root vegies to about the same size. In a mixing bowl mix with oil, salt and pepper.
Spread in a single layer on a cooking sheet. Stir occasionally during cooking process.
Roast at 350 for about 30 minutes or until tender.
Makes 6 servings as a side dish or go for extra servings to make up a meal.
Can be eaten hot or cold.
