butter flavor nonstick spray, 5 sprays3 large boneless skinless chicken breasts1/4 cup chopped onion1/4 cup chopped green pepper1 clove of garlic minced (or 1/4 tsp garlic powder)1 141/2oz can tomatoes cut up1/4 cup snipped parsley1/4 cup raisins1 tablespoon curry powder1/2 teaspoon salt1/2 teaspoon nutmeg1/4 tsp sugar1/8 tsp pepper1 Tablespoon cornstarch1 Tablespoon water
Spray butter flavor nonstick spray in a large skillet. Add onion, green pepper and garlic and cook until tender but not brown. Remove from heat. Stir in undrained tomatoes, parsley, raisins, curry powder, salt, nutmeg, sugar and pepper. Bring to boiling.
Add chicken pieces to the skillet, turning to coat. Bring to boiling: reduce heat. Cover and simmer for 35 to 45 minutes or till tender and no longer pink, turning chicken once. Remove chiken from the skillet; keep warm.
For sauce, skim fat from tomato mixture. Stir together cornstarch and 1 Tablespoon Cold waer; add to tomato mixture. Cook and stir till thickened and bubbly. Cook and stir for 2 minutes mor. Serve chicken and sauce with rice.
Makes 6 1/2 breast servings.
