Crustless Cheddar Broccoli Quiche

Ingredients
1 tsp. Canola Oil1/4 cup finely chopped onion1 pkg. (10oz) frozen chopped broccoli, thawed, drained.2 cups egg beaters1/2 cup lowfat cottage cheese1/2 cup kraft 2% chredded reduced fat cheddar cheese1/8 tsp. black pepper
Directions
Preheat oven to 350. Heat oil in small nonstick skillet on medium-high heat. Add onions, cook 5 minutes or until onions are tender, stirring occasionally. Add broccoli; mix well. Spoon into 9-in pie plate sprayed with cooking spray.
Mix remaining ingredients until well blended; pour over broccoli layer.
Bake 45-50 minutes or until center is set and top is golden brown.

    This was just wonderful! I substituted a box of frozen chopped spinach for the broccoli and added 1/4 cup FF sour cream, and chopped red bell pepper. To think that I enjoying eating spinach is incredible! My boys loved it, too- no need to make a separate meal for them. - 4/12/12
