Garlic Shrimp

1 1/2 lbs. large shrimp (peeled & deveined)1 Tbs. Olive Oil1/2 tsp. crushed red pepper8 or 9 garlic cloves (minced)1 Basil Leaf1/4 tsp. salt1/2 Cup dry white wine (penot grigio)2 Tbs. fresh parsley (minced)1/4 tsp. ground thyme
This recipe makes 4 servings
Heat oil in large, nonstick skillet over medium-high heat. Add crushed red pepper, garlic and Basil. Saute for about 30 seconds. Add shrimp and salt and saute for about 3 minutes. Remove the shrimp from the pan. Add wine, parsley and thyme to the pan; bring to a boil and cook until reduced to about 1/4 cup. This should take about a minute. Return shrimp to the skillet and toss to coat. Discard the basil leaf.
I made rice with this dish. Since the rice was still cooking, I covered the skillet and let it sit on the stove. This gave the shrimp a chance to really soak up all the flavors.
