Vegetable Quiche

Ingredients
4 large eggs, 1 medium zucchini - shredded, 1/4 cup shredded mozzarella cheese, 1 tsp pepper sauce (can substitute with 1/4 cup salsa or diced bell pepper)
Directions
pre-heat over to 350. Line muffin pan with foil muffin cups and add non-stick cooking spray. stir together all ingredients until evenly mixed and pour into muffin cups (should fill 12 large or 24 mini). Bake for 15-20 min or until a toothpick inserted in the center comes out clean. Cool and serve or freeze for a quick and easy breakfast treat!
