Vegetarian Red Beans (Rajma)

Ingredients
2 cups dry red beans1 large onion chopped6-8 roma tomatoes1 tsp tamarind paste1 tsp dhaniya powder1 tsp amchur powder2 tsp red chilli powder (adjust to taste)1 tsp garam masala powder2 cloves garlic, grated2" ginger, grated
Directions
Soak the beans overnight and boil them with some salt and 1" ginger (sliced). Set aside. Mash 1-2 tbsp of cooked beans separately.

In a pot heat oil add grated ginger & garlic. Add chopped onions and saute till lightly brown. Add chopped tomatoes, chilli powder, garam masala powder, dhaniya powder, amchur powder. Once tomatoes are cooked add the tamarind paste and boiled red beans. Adjust salt to taste. Bring to boil add mashed beans and then simmer on low heat until it reaches the thickness you like.

Garnish with 1 tbsp chopped cilantro.
Serve with hot basmati rice.
