1 lg onion1 each green, red, and orange bell pepper2 tsp minced garlic20 baby carrots1 T olive oil20 oz. ex-lean ground beef2 tsp Mrs. Dash2 tsp dried oregano1/4 tsp salt2 14.5 ounce cans diced tomatoes1 can 14.5 ounces chicken broth1 10 ounce box frozen chopped spinach2 cups whole-grain instant brown rice, dry1/2 cup grated parmesan cheese
Cut all vegetables into small wedges. heat oil in a large nonstick pan and saute' the vegetables and the garlic. Add the ground beef to the veggies.
Add seasonings to the veggies. Once the meat is completely brown, add broth, tomatoes and frozen spinach.
Bring mixture to a boil and add rice and cheese. Stir well. Cover and set timer for 5 minutes.
