Log Rock Salsa

2 Cups Chopped Tomatoes2 Sweet Banana Peppers, Chopped1 Cayenne Pepper, Chopped Fine1 Medium Onion, Chopped3 Garlic Cloves, Minced2 tbsp Fresh Lime juice1/2 tsp Cumin Seed or Ground1 tsp Salt2 tbsp Cilantro
In a non-metallic bowl, combine the onion, salt and lime juice and allow to sit while preparing the other ingredients.
Remove the stem and seeds from the peppers and chop finely and add to the bowl.
Add the rest of the ingredients and mix well.
Taste and adjust seasoning as desied and allow to sit in the refrigerator for 15-30 minutes, at least, before serving.
Makes 6 1/2 Cup servings of salsa
