Cajun Shrimp And Arugula Salad

Ingredients
1/2 cup fat- free mayonnaise2 scallions, finely chopped2 teaspoons fresh lemon juice2 teaspoons cajun seasoning1 pound large shrimp, peeled and deveined2 teaspoons olive oil2 (5-ounce) bags baby arugula
Directions
1. To make the sauce, combine the mayonnaise, scallions, lemon juice, and 1/2 teaspoon of the cajun seasoning in a small bowl: set aside.

2. Combine the shrimp and the remaining 1 1/2 teaspoons cajun seasoning in a medium bowl: set aside.

3. Heat the oil in a large nonstick skillet set over medium-high heat. Add the shrimp and cook just until lightly browned on the outside and opaque in the center, 1-2 minutes on each side. Divide the arugula evenly among 4 plates: place the shrimp on top, dividing it evenly. serve at once with sauce.
