Baked Cream Cheese Stuffed Chicken

1 lb boneless, skinless chicken breasts3 oz. fat free cream cheese1 T. Parsley 1 T. onion1 T. lemon juice1/4 cup flour1 egg beated1 cup crushed saltine crackers
Divide chicken into strips. Place between pieces of wax paper or saran wrap and smash with rolling pin until about 1/4 inch thick
In small bowl mix cream cheese, parsley, onion, and lemon juice until blended.
Spread mixture on all breast pieces. Roll up pieces starting at narrowest end and tucking anything loose.
Coat rolls with flour then dip in egg then roll in cracker crumbs.
Place in a skillet coated with Pam and brown rolls on all sides a few at a time.
Place chicken rolls in a single layer in a baking dish. Bake for 30 minutes or until chicken is done and juices run clear.
