Savory Pork Chop Dinner

Ingredients
1 tablespoon extra virgin olive oil1 small onion cut into wedges6 to 8 small new potatoes1 tablespoon rubbed fresh sage1 tablespoon rubbed fresh rosemary1 teaspoon dried, ground thyme1/4 tesapoon freshly ground black pepper1/4 teaspoon garlic powder1 dash of salt2 lean pork chops, trimmed of all exterior fat1 can low-fat cream of mushroom soup1/4 cup white wine
Directions
Pour olive oil into slow cooker. Cut onion into 8 wedges and add to pot. Scrub potatoes and cut into bite-sized pieces and add to pot. Sprinkle with ground pepper, salt, garlic powder, rubbed sage, rubbed rosemary, and ground thyme. Toss to coat vegetables with oil and seasonings.

Wash pork chops and lay on top of vegetables in slow cooker. Sprinkle with additional herbs, if desired. In a small bowl, whisk together soup and white wine. Pour evenly over pork chops and vegetables.

Cover and cook on low 6 or more hours.
