Liz's Tuna Salad

Ingredients
Starkist chunk light Tuna in water drained well(2 oz), 4 serving Red Bell Pepper, 1/2 cup choppedLettuce, red leaf (salad), 4 leaf outer Scallions, raw, 1/4 cup, choppedGarlic, 1 clove mincedCelery, raw, 1/4 cup, dicedPickled Jalapeno Peppers, 1tsp, chopped*Kraft Real Mayo, 4 tbspSunflower Seeds, with salt, 1/4 cup, hulled
Directions
Drain tuna. Then in a bowl add tuna, red bell pepper, scallions, garlic, celery, jalapenos and mayo. Mix thoroughly. Place one lettuce leaf on each plate (4 plates). Dip up about a cup of the tuna mixture and place it in the center of the lettuce leaf. Sprinkle with sunflower seeds to give it a crunch. Enjoy. Makes 4 servings

    Outstanding recipe. This is the best tuna salad I've ever had. I'm going to fiddle around with the ingredients a little (pickle, seasonings etc) and the presentation (toast, tortilla etc) but paired with soup, hands down this is a fantastic lunch. - 12/15/08
