1c chopped asparagus4 large eggs1/2 c cottage cheese 1%1 tsp dry mustard1 tsp olive oil1/2 c sliced mushrooms1/4 c chopped onion
Preheat oven 400F - steam aparagus 5 min until tender. Beat eggs til foamy, beat in cottage cheese and dry mustard. Coat oven safe skillet with olive oil. Saute mushrooms, onion until tender. Stir in asparagus. Pour egg mixture over vegetables and cook over low heat for 5 - 7 min. Place in oven and back for 10 min or until set.
