Adobo Sauce

Ingredients

1 cup rice vinegar1/2 cup soy sauce1 head of garlic, minced2 tbsp olive oil1/2 tsp. black pepper1/2 tsp. white pepper2 bay leaves
Put vinegar, soy sauce, water, and spices in a saucepan. Heat slowly for 15 minutes.
In the meantime, add olive oil to large heavy skillet. Add garlic and brown on medium low for about 5 minutes. Add meat of your choice (dark meats work best), and brown for about 5-10 minutes, turning once. Add sauce to meat and simmer on medium-low for 30 minutes or until done. Sauce should be reduced by about half. Pour sauce over meat or rice. Calories only calculated for sauce, not meat.
Makes about 16 2 tablespoon servings.
