Raspberry Chipotle Salmon

2 three ounce Salmon fillets, rinsed and patted dry1/2 Tbsp Olive Oil1 tsp Mediterranean Seafood Grinder1 clove garlic, finely minced1/4 cup raspberry preserves1/4 Tbsp Kroger Zesty Blends SW chipotle seasonings2 Tbsp Balsamic vinegar
1. Heat a non-stick skillet over medium heat for one minute. In the mean time, season the salmon fillets to taste with the seafood grinder. Add the olive oil to the hot skillet and swirl the pan to coat. Add the salmon fillets to the hot skillet and bronze for 2 minuted per side. Lower the heat to medium and continue to cook until the fillets begin to flake (about 3-5 minutes). Remove the salmon fillets to serving plates.
2. Add the garlic to the pan and quickly sauté for about 1 min to allow garlic to become fragrant. Be careful not to burn the garlic.
3. Combine the raspberry preserves, chipotle seasonings, the balsamic vinegar and add to the pan. Stir to combine. Pour sauce over resting salmon fillets and enjoy!
