Apple Cinnamon Pancakes

3 egg whites, beaten (or egg replacer for 3 egg whites)1/2 cup apple sauce, unsweatened1/2 cup skim milk (or low fat soy milk)1/2 cup water1/4 cup crude bran (Miller's Bran)1/2 cup whole wheat flour1/2 cup soy flour1 tbs baking powder1 tsp cinnamon
Combine the first 5 ingredients. Sift remaining 4 ingredients together and combine with wet ingredients, stiring well. This will make about 2 1/2 cups batter.
Spray a non-stick pan or griddle with cooking spray. Pour about 1/3 cup batter into pan for each pancake and cook on both sides. Respray with cooking spray when adding more batter.
Can be made ahead and kept in refrigerator and then reheated in a microwave.
Makes 8 pancakes.
