1 tbsp olive oil2 onions, chopped5 cloves garlic, minced1 lb. extra lean ground beef3 tbsp bouillion cordial or 3 cubes, crumbled6 tbsp. chili powder5 tbsp. ground cumin2 tsp. ground cinnamon3 tsp coarse sea salt1 tsp black pepper1 tbsp worchestershire sauce1 bottle dark beer1 28 oz. can diced tomatoes1 28 oz. can crushed tomatoes1 28 oz. can red kidney beans, rinsed and drained1 14 oz. can chickpeas, rinsed and drained4 medium zucchini, chopped2 large green peppers, chopped
Heat the oil and fry the onions, beef and garlic on relatively high heat until the beef is all browned. There shouldn't be anything to drain with extra-lean meat, but if there is, do that now and return to the pot.
Pour in the beer and let it reduce, while its boiling add all the spices and bouillon.
Add the tomatoes and beans. Stir and bring to a boil.
Add the chopped veg, return to a boil and lower heat to medium-low. Let the whole thing stew for at least 1 hour, stirring occasionally. Serves 12.
