Black Beans in Chipotle-Adobo Sauce

-Combine the beans, cold water, halved onion, bay leaf, salt and pepper in a saucepan. Bring to a boil for 1 minute, and reduce heat and simmer for 40 minutes. Remove onion and bay leaf- discard them.
-Meanwhile, saute the onion and garlic till soft and garlic in non-fat cooking spray. Stir in chopped chipotles and adobo sauce and simmer 30 seconds, remove from heat and blend.
-Combing the beans and sauce to coat and serve immediately.
