Ingredients
2 c. cabbage, shredded1/4 c. olive oil1/4 c. lemon juice1/2 t. garlic, minced1/2 t. salt2 T. fresh mint, finely cut (or 1 T. dried mint)
Directions
Whisk together all ingredients except cabbage. Pour over cabbage & toss. Refrigerate for 1 hour, to let flavors meld. Serving size: 1/2 c. Servings: 4.
