Pork Tenderloin in Green Pepper Sauce

Ingredients
4-5 oz Pork Tenderloin sliced into medalions1/2 cup onion1/2 cup green pepper1 cup sliced mushroom1 clove garlic (at least)1/2 cup / can low fat cream of mushroom soup1 cup beef broth2 tsps Worchestershire Sauce
Directions
saute the onions, garlic and green pepper in a pan sprayed with Simplicity.
Add mushroom and cook until beginning to soften.
Cut pork into medalions, add and brown.
Add half a can of low fat cream of mushroom soup (I freeze the other half), beef broth, Worchestershire sauce and simmer all together for about 20 to 30 minutes. The sauce will thicken up.
Salt and peper to taste.
I serve over No Yolks egg noodles, brown rice or whole wheat pasta (not included in nutrition calculation)

    Thanks for posting this - I was looking for a recipe using these ingredients - I didn't let simmer - I just cooked at high temp and stirred (pressed for time) and it was REALLY delicious. My husband enjoyed it as well. I served over potato gnocchi. Nice combo. - 7/16/11
